When we create CA policies we organise them by name or number - for instance "CA01: policy name" and this allows us to see same policy items in same order across all tenants for consistenancy and faster reference - it's just visually easier - allowing column sort would be very helpful on the variuous pages. This can also apply to other main pages like sorting by security score low to high etc.
